Extra Credit!
After I made the frushi I wasn't sure what to do with the left-over coconut milk and kiwi... so i searched online for something interesting and came up with Creamy Kiwi and Coconut Milk Cupcakes! Since I now have an electronic hand mixer (yay!) I thought for sure I could not mess up cupcakes twice, and I didn't! They turned out really great and I was watching Olympic hockey the whole time! Really good game too :)

Coconut Frushi (the raspberries are RED)
Ok, not as impressive as the photo with the recipe. I made these for the Chinese New Year Party I hosted on Saturday and they were pretty good! Easy to make and tasty, two thumbs up! They just didn't turn out really firm, and that made dipping them yogurt kind of a challenge but everyone managed :)

Pink, Right?
These were supposed to be red but really, how much food coloring can one add before it's just time to give up? So they are pink instead. The recipe was called Black and White Macaroons and really they taste like a combination macaroon/meringue. Soooooo good.

Baked Pastina Casserole
This recipe wasn't as "red" as I was thinking but it tasted fantastic! I reccommend it so highly that I may put it on my other blog too! I did have two small problems...one is that it could have used more chicken and the other is that baked pasta always has some crunchy pieces in it. Not so good. But the 99% that came out noncrunchy were great! You can find the Recipe Here (under a different name) but I got it from Giada De Laurentiis' book Everyday Pasta.

Red
I think it's my turn and I'm choosing a color this month instead of an ingredient! Red! I think I may have stolen this idea from my friend...but really it's in honor of Valentine's Day so I don't know if that counts as stealing...Just make something that involves some sort of red food (strawberries, peppers, tomatoes etc.) or something that ends up looking red after you make it...makes sense, right?
